12oz of chopped Sonora Valley Pitted Medjool Dates🌴
1/2 cup of sugar
½ cup of water
5 egg yolks
21oz of heavy cream
10oz of milk
➡️In a saucepan put the dates, ¼ cup of sugar and ½ cup of water in medium heat. Stir constantly until the mixture thickens.
➡️In a medium size bowl, whisk together the egg yolks and the remaining ¼ cup of sugar until it turns a pale yellow.
➡️In a medium size pot add the heavy cream and milk and turn the heat to medium. Stir constantly to avoid the milk and cream from burning. If it starts to bubble, lower the heat. ➡️Once the mixture is warm, add a few tablespoons of warm cream to the egg yolks, whilst whisking to combine
➡️Once thoroughly incorporated, add it back to the cream and milk mixture and cook for futher 5 minutes on medium to low heat.
➡️Turn off the heat and let de custard cool.
➡️When de mixture has chilled, churn in your ice cream machine for 50 minutes
